Today, I made molten lava cookies with my Dad! They tasted better than expected, but we did make a few mistakes (being beginner bakers). Don't worry, I'll guide you through it, so you don't make the same mistakes. :)
Things you will need: 2 sticks of butter (softened), 2 cups of sugar (we did about 1 and a half to make at least somewhat healthier), 3/4 cup of cocoa powder, 2 eggs, 1 tsp pure vanilla extract (we accidentally added 1 tablespoon- whoops!), 2 cups of all purpose flour, 1 tsp of baking powder, 1/3 cup of dark or semisweet chocolate (at least 60% cocoa, and roughly chopped). Oh right, and an electric mixer!

Step 1.Cream together the butter and sugar with the electric mixer. (that's my dad's hand, not mine :P)
Add the cocoa powder, eggs and vanilla. Mix it all up until it's combined.
Mix baking powder and flour together in a separate bowl. Gradually add it to the butter/sugar/vanilla/powder/eggs mixture.
Step 2: Preheat the oven to 177 degrees Celsius (350 degrees Fahrenheit). Shape the dough into 1-inch balls. We did 2-inch, which I DO NOT RECOMMEND because there is too much chocolate crust and not enough melted lava chocolate. Don't do the same size as us unless you will put extra chocolate in Step 3. The picture is so you can see the distance between the balls. Anyway, place the chocolate balls on a cooking tray (which is lined with parchment paper). Stick your thumb into the ball and place a piece of chocolate into it. Fold the dough over the chocolate so the chocolate is completely covered. Add as much chocolate as you can cover with dough in each ball to add a lot of melted chocolate taste!
Step 3: Bake for around 9-11 minutes or until edges are firm and tops are soft. If you want to reheat the cookies, you can just microwave them on a microwave-safe plate.
Even though we made mistakes, they turned out delicious! I hope you guys like them.
